Golden Gate Holiday Caravan Recipe of the Month

The kitchens in modern caravans are as good, if not better than the ones we have in our own homes but of course, they are not used quite so much. Most holidaymakers eat out quite a lot and in the summer make use of barbecues. However, if you are taking a holiday near the end of season you might want to cook something delicious without too much effort. So here is our take on something you can cook in one pan and pop in the oven for an hour and a half:

 

Devon Hotpot  – a Holiday Caravan Recipe

Ingredients:

Potatoes peeled and medium sliced (you can usually get around 4 slices from an average size potato)
Carrots (sliced)
Peas or runner beans (can be frozen)
2 Medium Onions (sliced)
Minced Beef
Salt/Pepper/Herbs to taste
Oxo cubes
Olive oil or butter
Hot water
White wine – optional

The amount you need of these ingredients depends on how many you want to feed.

Method:

Heat the oven to 160C
Place a layer of potato across the bottom of either a casserole dish or deep roasting tin
Then a layer of minced beef
A layer of onion with salt and pepper/herbs to taste and one Oxo cube crumbled evenly across
A layer of each of the vegetables
Another layer of potato, minced beef, onion, salt & pepper/herbs to taste and one crumbled Oxo cube across the layers
Another layer of each of the vegetables
And then a top layer of potatoes

Having completed the layers, boil a kettle of water and pour over the layers so that the level comes up to just under the top layer of potato. You can pour a cup of wine in first if you wish.

Pour a little olive oil over each potato and then sprinkle salt and pepper to taste over them.

Cover the dish with foil and place in the oven for one hour. After an hour, remove the foil and cook for a further half an hour or until the potatoes are golden brown.

This is a great meal for all the family and ideal for cooking in a rented holiday caravan. You can just leave it to cook and in fact it won’t matter if you leave it in the oven with the foil on for more than an hour. The crucial bit is when the foil comes off because you don’t want to burn the potatoes.

It’s also possible to place the hotpot in the oven on a lower heat and leave it to slow cook whilst you are out.
