What other excuse do you need to have a family caravan barbecue? A free afternoon at your static caravan and a sunny day?

 

Experiment with colourful salads, char-grilled veggies and spicy marinated meats. Why not mix things up with a theme – we love Mediterranean and American inspired BBQ recipes.

 

 

Don’t be tempted to just throw a few boring sausages onto the grill. There are hundreds of tasty recipes for barbecue meals, for all skill levels, available on the internet and in current cookery books, and here are some of our own personal caravan barbecue recipe ideas.

 

 Veggie Kebabs

Cut 2 yellow peppers, 2 courgettes, 16 cherry tomatoes and a packet of halloumi cheese into chunks. Soak wooden skewers in water, then thread the ingredients onto the sticks, alternating the items as you go. Sprinkle with seasoning and olive oil, before placing onto the BBQ grill, turning frequently to allow for even cooking.

 

Beef and Red Pepper Burgers

In a large bowl mix together minced beef, roasted chopped pepper, an egg, grated carrot and breadcrumbs. Using your hands, shape into 6 equal burgers. Grill on the BBQ before adding cheese slices for a tasty topping. Service in floury rolls with cucumber and mayonnaise.

 

Marinated, spicy lamb skewers

Blend together the following marinade ingredients – plain yoghurt, ginger, garlic, red chilli powder, garam masala, ground cumin, salt and pepper. Add the cubes of lamb and leave overnight if possible in the fridge to absorb the spices. Place the cubes of meat onto skewers, and grill slowly on the BBQ, around 12-14 mins, until charred in places.

 

Mexican Corn on the Cob

Soak corn cobs in water for around 15 mins, then place onto a hot grill or griddle pan. Cook for around 30 mins, turning frequently, until the corn feels tender. Mash some softened butter with chilli powder to taste and lime juice, then spread this flavoured butter over the top of the hot corn cobs. Serve with lime wedges.

 

Sticky Belly Pork

To ensure that your pork meat is really tender, first braise it in stock in the oven for around 2 hours. Mix up a marinade with muscovado sugar, treacle, tomato puree, chilli powder, cumin and crushed garlic cloves. Spread this mixture over your sliced pork belly meat, then either place back into the oven until the marinade melts onto the meat, or place directly onto the barbecue until the meat is crisped.
